Top 5 Summer Keeley Krackerz Summer Recipes

Note: This is a blog post for my IST 600 Blogging for Information Professionals class; Keeley crackers do not exist, but the recipes are real; substitute Ritz crackers for “Keeley” crackers and you’ll still have an excellent experience.

Looking for some new treats to satisfy your hungry family this summer?  Based on a recent poll of our customers, the following were rated as the top 5 Keeley Krackerz recipes of the summer season:

1. Zesty Roast Beef Bites:

9 Keeley Krakerz –  Low Sodium
2 oz. roast beef, cut into 9 pieces
2-1/4 tsp. KRAFT Prepared Horseradish
chopped fresh parsley (optional)

Top each cracker with 1 roast beef piece and 1/4 tsp. horseradish; sprinkle lightly with parsley.
Serve immediately.

2.  Wisconsin Wings:

18 Keeley Krackerz Crackers, finely crushed (about 3/4 cup crumbs)
1/3  cup KRAFT Shredded Parmesan Cheese
1 tsp. dried oregano leaves
1/2  tsp. garlic powder
1/2  tsp. paprika
1/8  tsp. coarse ground black pepper
2 lb. chicken wings, separated at joints, tips discarded
1/3  cup GREY POUPON Dijon Mustard

Preheat oven to 350°F. Mix cracker crumbs, Parmesan cheese, oregano, garlic powder, paprika and pepper in shallow dish.

Coat chicken with mustard, then roll in crumb mixture until evenly coated. Place on greased baking sheet.

Bake 35 to 40 minutes or until golden brown and cooked through, turning chicken over after 20 minutes. Serve warm.

3. Keeley Krackerz Cheeseburgers

1/4 lb. ground beef
2 Tbsp. ketchup
3 oz. CRACKER BARREL Sharp Cheddar Cheese
48 RITZ Crackers

Brown meat in small skillet on medium heat, stirring frequently to break up the meat. Drain well. Stir in ketchup.

Cut cheese into 6 slices; cut each slice into quarters.

Top each of 24 of the crackers with 1 tsp. of the meat mixture and 1 cheese piece; cover with second cracker to make sandwich. Serve warm.

4. Keely Carmel Apples

5 apples (1-1/2 lb.), washed, well dried
1 pkg. (14 oz.) KRAFT Caramels
2 Tbsp. water
30 Keeley Krackerz, coarsely broken
1/4  cup multi-colored sprinkles

Insert wooden pop stick into stem end of each apple; set aside.

Cook caramels and water in medium saucepan on medium-low heat until caramels are completely melted and mixture is well blended, stirring constantly.

Dip apples in caramel; immediately roll bottoms in crackers, then in sprinkles.

Place on waxed paper-covered baking sheet; let stand 30 min. or until caramel is firm.

5. Keeley Ham and Cheddar Snacks

1 sleeve Keeley Krackerz (38 crackers), finely crushed
1 tsp. dried oregano leaves
1/2  tsp. garlic powder
1/2  tsp. paprika
1/8  tsp. coarsely ground black pepper
2 lb. chicken wings, separated at joints, tips discarded
1/2 cup hot pepper sauce

Mix cracker crumbs and seasonings in shallow dish.

Coat chicken with hot pepper sauce, then dip in crumb mixture, turning to evenly coat both sides of each wing piece. Place in single layer on greased baking sheet.

Bake 35 to 40 min. or until golden brown and done, turning pieces over after 20 min. Serve warm.

Superbowl Sunday Buffalo Chicken Wing Dip

Although there are several versions of the story of the origin of Buffalo Chicken Wings, the most common one told in Central New York goes like this:  One night in 1964, Teressa Bellisimo’s son brought some friends over.  When hunger pains struck the crowd, Teressa quickly improvised by using what ingredients she had on hand.  She broiled some chicken wings and sprinkled them with hot sauce.  As a side, she served celery sticks with blue cheese dressing as a dip.  This, of course, occurred in Buffalo, New York; hence, the name “Buffalo” Chicken Wings was born.   In preparation for your next Superbowl party or other celebration, try this new spin on an old favorite:

Buffalo Chicken Wing Dip Recipe

Ingredients:
3 Chicken Breast Halves
2 Packages of Cream Cheese (at room temperature)
1 Cup of Cheddar Cheese
1 Cup of Frank’s Red Hot Sauce

Instructions:
Boil chicken then chop chicken in food processor. Pour chopped chicken into a bowl. Mix in cream cheese, cheddar cheese, and Red Hot Sauce. After all ingredients are mixed well, pour mixture into a 9″ x 9″ baking dish. Bake at 350 degrees Fahrenheit for 30 minutes.

Spread dip on Keeley Krackerz and eat.  It’s even better than the original!  Try them for your next Superbowl party or family get together.
